Pot roast can be amazing! Speaking of pot roast... I have been hearing about this pot roast for weeks called "Mississippi Roast" which I read is one of the most shared recipes in the history of the internet. I've heard from many people that it is delicious and easy. Here's the recipe if anyone is interested... I've not made it myself yet, but plan on making it soon.

How to Make Slow Cooker Mississippi Roast

1. Place chuck roast in crock pot.
2. Sprinkle dry Hidden Valley Ranch dressing mix, add packet of dry McCormick Au Jus mix, a stick of butter and 5 pepperoncini peppers. DO NOT ADD WATER!
3. Cook on low 7-8 hours.

Mississippi Crock Pot Roast Recipe

This is the easiest way to fix the most delicious chuck roast!!! You will not be disappointed.

Prep: 15 Min

Cook: 8 Hr

Ingredients

1 beef chuck roast
1 pkg - dry ranch dressing mix
1 pkg - mccormick au jus gravy mix
1 stick - butter (optional)
4-5 - pepperoncini peppers

Directions

1 Place chuck roast in crock Pot
2 Sprinkle Ranch Dressing mix on top followed by Au Jus Gravy Mix.
3 Place butter on top of dry mixes. Butter is optional. (I forgot it the first time and the roast was still > delicious.) Place peppers on top of roast. Add NO water!!!!
Cook on low for 8 hrs, then enjoy!!!

RGALP, Thanks! I did not mix them, until I was eating them. I know it's considered gauche... but when I eat the black-eyes, I do take a small bit of the cornbread and add it to a bite of black-eyes. If you mix the cornbread and black-eyes more than a bite at a time the corn bread will be soggy. wink

Black-eyes can be cooked very easily with only a bit of bacon or salt pork. That's how I usually cook them.

As a side note, I like almost all kinds of corn bread, but I think skillet cornbread works best with black-eyes. Skillet corn bread is made in a cast iron skillet so it has a nice crispy bottom, almost a crust.

You sound like a pretty good cook to me, just modest, a great quality! I love pot roast!

And whos ever recipe that is with the Hidden Valley Ranch dressing mix and dry McCormick Au Jus mix, it sounds wonderful and easy. It will be my next Pot roast dinner.
Thanks for givin up that recipe TDTAT!

lunadelmar, Isn't that amazing? I had some sugar-less brownies made with black beans a while back and was shocked how yummy they tasted.

lunadelmar, Cookies too! I used to order my step-grandfather sugar free cookies because he had diabetes. I tried one and you can't really tell much difference. The thing to remember is that sugar free does not mean healthy and there are some very healthy deserts that can be made if you search for "plant based" recipes. A lady who attends a book/meditation class I go to has a plant based recipe website and I will try to find a link. She's the one who made those black bean brownies that were do delicious. She uses things like raisins to naturally sweeten her healthy deserts. wink
