This shrimp quiche is very popular, even with the kids in the family. It is often requested and I even made it last year for Christmas breakfast. I found the recipe a few years ago on the Publix website.


Southern Shrimp and Squash Quiche

Ingredients
1 medium yellow squash, coarsely chopped
1/4 cup fresh basil, coarsely chopped
8 oz peeled/deveined shrimp (tails off), coarsely chopped
1 frozen deep-dish piecrust
1 tablespoon unsalted butter
4 large eggs (or 1 cup egg substitute)
1/2 cup reduced-fat mayonnaise
1/2 cup sour cream
1/2 cup shredded mild cheddar cheese, divided
1/2 cup shredded mozzarella cheese, divided
1 teaspoon Old Bay seasoning
1 teaspoon hot pepper sauce
Steps

Preheat oven to 350°F. Cut squash into small cubes (1/2 or 1 cup); chop basil and shrimp (wash hands). Pre bake pie crust 5 minutes or until sides are set (place a few fork holes in uncooked crust before baking to prevent bubbling). I use pillsbury pre-made crust that you put in your own pan.
Melt 1 tablespoon butter in medium, nonstick sauté pan on medium heat. Add squash; cook 3–4 minutes, stirring occasionally, or until tender. Remove pan from heat; set aside to cool slightly.

Combine in large bowl: 4 eggs, mayonnaise, sour cream, 1/4 cup of each cheese, seasoning, pepper sauce, basil, shrimp, and squash; whisk until blended. Pour egg mixture into crust; top with remaining 1/4 cup of each cheese. Bake 30–35 minutes or until center is set and shrimp are pink and opaque. 35 minutes usually works for me. Let quiche stand 15 minutes to set. If there's a bit of water on top dad off with napkin. Serve.

I like to cook Duck with orange and honey (family recipe from an old french woman) for Christmas dinner or lunch. It is easy and does not have many ingredients but it takes 2-3 hours. I find whole ducks at Publix for less than $15 sometimes although there is not a lot of meat like a chicken. If your grocery store does not have one just ask sometimes they have them in the back and they will order them on request. If you have more than 3-4 people or you have some heavy eaters then cook two or more ducks.

Honey and Orange Duck a la France

Preheat oven to 410 F
2. Place duck in a baking pan, without anything for 30 min. The fat will drain. (I use a ceramic pan).

3. Remove the fat from the dish, and clean the dish with paper to remove all the fat

4. Place the duck back into the dish with honey on it, orange quarters, splash of soy sauce, onions, a splash of orange juice (less than .25 cups). I cover the duck in honey and use a whole orange. Peel the orange and Get rid of the white outer parts of the orange to reduce bitterness.

5. Place in the oven at 380-400 for half an hour

6. After this half an hour, add the potatoes around the duck

7. Let it cook for 1 h

8. Dilute some maizena (corn starch) into a glass of water and poor it into the duck sauce to thicken the sauce

9. Let cook for 30 minutes to 1 hours depending on oven (you can't really over cook the duck. 3 hours total usually makes for a very tender duck but can be done in less time.)

Check regularly and turn the duck every 30 minutes (If you don't want to turn the duck then use foil to cover). Sometimes I do not even bother rotating the duck and it turns out fine. If the duck is burning or getting too brown place aluminum foil on top or just on legs. Take duck out of pan and Let the duck rest 10 minutes before serving. I put the duck on a platter with the potatoes on the side and put the gravy in a gravy boat. The duck usually falls off the bone but I like to pre cut in the kitchen to avoid the stress of cutting it in front of everyone at the table.

Leftover Duck Hash
If you have left over duck and potatoes you can make duck hash for breakfast or lunch. Strip the duck and chop up. Chop up the potatoes and mix with duck. Save any skin and put on top to get crispy or throw away. Bake in a small casserole dish for 15 or 20 minutes or until hot at around 350.

shirlsplay, What about lobster? I'm sure it would work with some chopped up lobster and you do not need that much. Or maybe it would not be terrible without the shrimp or any meat/seafood. moon cake

robsspot3131, Well bless your heart. Some of best food I have ever eaten was cooked by men and it pains me to say that! face with tears of joy But you can post any message to enter the contest. I don't really subscribe to whole the male female thing as I love to fish and hate to shop.

Anyone who can read can cook and reading is probably not even required to throw a steak on a grill or make an omelette or bake a potato and add some toppings. If you really want to impress a lady then cook her something delicious. I am rather lazy but I suppose if my enthusiasm for eating was less then I would trust other people to make all my food.

ONE OF MY BOYFRIEND FAVORITE THINGS ARE LITTLE SMOKIES IN A BLANKET AND THEY ARE REAL EASY TO MAKE ALL YOU NEED IS A PACKAGE OF LITTLE SMOKIES , CHEDDAR CHEESE, BUTTER AND CRESCENT ROLLS YOU CAN REPLACE THE CRESCENT ROLLS WITH BISCUITS. JUST ROLL OUT THE DOUGH PUT A LITTLE BUTTER AND CHEESE AND A LITTLE SMOKIE ON THE DOUGH ROLL UP THAN BAKE. PRETTY EASY. IT'S MORE OF A SNACK THAN A MEAL. Smile
